The perfect recipe for Easter :)
Strange actually, that Easter is much less important days for most people than Christmas. It is nice in the spring, so the chance of good weather is a lot greater than in December. I always like to invite friends or family for an extensive brunch at Easter. If it's my 'lucky year', the weather is great and we eat in the garden. Other years we sit around a round table inside, enjoying all kinds of tasty snacks. My topper? Scrambled eggs with salmon and truffle oil! Curious? Check out the recipe below.
Ingredients for 2 people:
4 eggs
Splash of milk
2 slices of smoked salmon
Splash of truffle oil
Splash of butter
Chives
Break the eggs into a bowl and add a splash of milk. Beat it lightly. Heat the butter in a frying pan and pour the egg mixture into the pan. Start stirring as soon as the mixture begins to set. Don't let it get too dry, I like it when it stays creamy. Drizzle a little truffle oil over the egg and serve with the smoked salmon. Garnish with chopped chives. Enjoy your meal!
