A very nice recipe :)

January and February, I always find it a bit difficult months. Spring is expectantly waiting for us around the corner, but on gray days like today it still seems very far away. Time for comfort food! I'm making my favorite pumpkin soup today. Nice and warm, velvety soft and it also looks very cheerful on your plate. It makes me happy! Also fancy soup? Here's the recipe:

Ingredients:

  • 1 Pumpkin
  • water
  • chicken bouillon
  • 2 large onions
  • can of chickpeas
  • pepper & salt to taste
  1. Peel the onions and pumpkin.
  2. Cut the pumpkin into cubes.
  3. Wok the onions together with 2 cloves of garlic.
  4. Add the pumpkin and stir fry for a few more minutes
  5. Add 2 liters of water (depending on how thick you want the soup) and 1 stock cube
  6. Cook until the pumpkin is soft and add the chickpeas
  7. Puree the soup with a hand blender and add salt & pepper to taste
  8. Garnish the soup with a basil leaf.
